Coffee cake with coffee icing
Coffee Cake :
120 ml of the coffee machine
2 teaspoons of instant coffee powder
180 g flour
6 g baking powder
½ teaspoon fine salt
112.5 g of softened butter
180 g sugar
½ teaspoon vanilla extract
Icing Coffee :
15 ml of the coffee machine
¼ teaspoon instant coffee powder
½ tablespoon milk
130 g powdered sugar ( icing sugar )
For the cake :
Preheat oven to 180 º C.
Grease with butter and sprinkling with flour with a shape about 22 cm in diameter.
Mix the coffee with the coffee powder and let cool completely .
Sift flour with baking powder and salt . Put aside .
In a bowl , beat butter with sugar until creamy .
Add the vanilla and egg yolks , one at a time , beating well between each addition .
Lower the mixer speed to low and add the flour alternating with the coffee in 3 times ( start and end with flour) .
Whisk the egg whites into the batter and mix gently with a spatula .
Pour the batter into the pan and bake for about 30 minutes or until a toothpick inserted in center comes out dry .
Remove from oven and allow to cool slightly inside the form ( about 10 minutes) before unmolding .
For the frosting :
Mix the coffee with the coffee powder and milk .
Add powdered sugar and beat until smooth.
Pour over cake cold.
